I use the 18mm finder and have to guess the rest - and try again, if it is not ok. :))
For the sky I use the red filter emulation in Nik Silver Efex and some other tools and UPoints

For PP I use almost always Lightroom 3.
The B&W image stays internally in color and you can tune for example the blue from the sky down to get a black sky or in this picture tune down the skin colors to make the skin lighter

with the 12mm and pointing down that much you have to keep your feet out of the picture :)
